Itinerary 

Beziers to Carcassonne

Day 1
Meet the crew at a Champagne reception. In the evening, the chef reveals what you will be cooking in the week ahead. Then enjoy dinner on board.

Day 2
Cookery lesson: Prepare quiche & terrine. Cooking lesson: Tarte au Citron and caramel sauce.

Cruise along the beautiful Canal du Midi to Capestang. Admire the canal’s beautiful locks, bridges and tunnels. Prepare a lunch of Quiche Lorriane and country-style terrine in your first lesson. In the afternoon cook a lemon tart with caramel sauce. Enjoy it for your evening dessert.

Day 3
Cookery lesson: Gazpacho, rack of lamb and red wine and tarragon sauce, and poached white peaches with homemade vanilla ice-cream.

Visit Olonzac to explore the morning market. Return to Belmond Alouette and cruise along the Canal du Midi. Then prepare an avocado and cherry tomato gazpacho for lunch. Afterwards relax on deck before you return to the kitchen to prepare the lamb. Learn how to marinate the meat and make a red wine and tarragon sauce. Also poach some peaches and prepare homemade vanilla bean ice-cream

Day 4
Cookery lesson: Bourride

Visit the spectacular morning market in Narbonne and help choose ingredients for dinner. Enjoy the city’s fine architecture, shaded boulevards and riverside location. Have lunch at a wonderful seafood bistro next to the market before cruising to Homps. Tonight, prepare Bourride, a dish made from vegetables, monkfish and mussels and garlic mayonnaise.

Day 5
Cookery lesson: Mediterranean cooking and fish preparation

Continue to cruise along the beautiful Canal du Midi. In the morning prepare a delicious cheese roulade with cream cheese, prawns and dill. Learn Mediterranean-style cooking using fresh ingredients such as olive oil, herbs and vegetables. Discover how to fillet a fish before preparing some Mediterranean dishes. By evening, moor in the pretty town of Trebes.

Day 6
Cookery lesson: Fresh pasta-making and soufflé

Cruise to Carcassonne, which is famous for Cassoulet. Visit a restaurant in the old town and learn how to make this classic dish. Sample your cassoulet for lunch. Back on board, learn how to make ravioli with seafood and a white wine sauce. Finish by learning the delicate art of the perfect soufflé. Dine on a sumptuous farewell gala dinner.

Day 7
After breakfast, transfer to the train station.
